To my mind, the perfect lunchbox muffins recipe will give you the keys to delicious muffins (obviously!) but then also muffins that are customisable, freezable, requiring no fancy ingredients and ready to bake in minutes without using lots of kitchen utensils.
As you will see, this recipe ticks all the boxes. These little muffins will be in your oven in less than 5 minutes, made from ingredients you most likely already have in your fridge and cupboard, using only a mixing bowl a fork or whisk and muffin trays. You will be able to jazz up the recipe with vanilla seeds, berries, raisins, milk chocolate buttons, dark chocolate chips… Finally, they freeze really well. I have checked and they will defrost in less than an hour and a half, which means you can add them frozen to your children’s snackbox at breakfast and they will be able to enjoy them as morning snacks.

Ingredients
- 1.5 mug self raising flour
- 1 mug sugar
- 1/2 mug milk
- 1/2 mug vegetable oil
- 1 egg
- 1 pinch salt
Instructions

Preheat your oven to 180ºC.

Combine all your ingredients and poor the mixture into your muffin trays to make 10 little muffins. Feel free to get creative adding vanilla seeds, berries, raisins, milk chocolate buttons, dark chocolate chips...

Bake for 20 minutes. Voilà!

These lunch box muffins sound so delicious. I don’t like a lot of clean up when I am baking. This recipe would not create a big mess to clean. They sound so delicious. I will have to try them.
