This post is the second part of my French mum interview #1: Noémie and her easy crepe recipe.
My friend Noémie, whom I interviewed, had a family tradition when she was a child of candlelight dinners of crepes, savoury for mains and sweet for desserts ;)
This is her easy crepe recipe, which I have myself been using over and over again!
Ingredients
- 3 eggs
- 250 g plain flour
- 0.5 l milk
- 10 g butter melted
Instructions

Whisk the eggs. Gently mix in the flour, milk and melted butter.

Heat a frying pan.

Pour the equivalent of 2 to 3 tablespoons of batter into the pan then quickly tilt the pan with a circular motion so that the batter forms a thin pancake covering evenly the base of the pan.

This will cook in a minute so flip it and cook for 30 seconds to a minute on the other side, then place aside on a plate.

Continue with the rest of the batter.
Recipe Notes
You can keep your crêpes warm by covering the pile with aluminium foil or re-heat them empty or filled in the microwave/on a frying pan.
Melted butter tastes a lot better than oil and by mixing it in you won't have to grease your pan. Savoury crêpes ideas: ham, egg, cheese, mushrooms; Sweet crêpes ideas: lemon and sugar, jam, icing sugar, nutella...
Recipe for approximately 16 crêpes.
