As per my previous post, I have had the pleasure to interview Julie, the French mum behind behind “les 3 têtes blondes” on the blog.

She explained that she makes a lot of “tartines” with a cheese vegetable base, which she declines according to the seasonal products she finds at the market. These are perfect quick and easy family meals. So when I asked her which recipe she would wish to share with us she chose one of her “tartines” recipe: la “tartine du soleil” (tartine of the sun). This recipe is her family’s favourite “tartine” recipe. It has been named this way by her oldest daughter.

This is the recipe for one “tartine du soleil”. You may want to allow one per person for a starter or two for a main course.

Tartine du soleil SQ

La "tartine du soleil"

 Tartines are perfect quick and easy family meals.

Ingredients

  • 1 small courgette
  • 1 big slice pain de campagne/farmhouse bread
  • 1.5 tbsp basil or rocket pesto home-made if possible, so much better
  • 1 tsp pinenuts
  • 2 slices soft goat cheese log
  • salt and pepper
  • olive oil
  • slices red onion
  • rocket
  • balsamic glaze

Instructions

  1. Preheat your oven to 180°C.
  2. Slice the courgette into ribbons with your vegetable peeler or your mandolin.
  3. Cook the courgette ribbons in a slightly oiled and very hot non-stick frying pan until lightly coloured. Put aside.
  4. Spread the pesto onto the bread. Add the courgette ribbons on top and sprinkle with pinenuts. Add the goat cheese slices, salt and pepper to taste.
  5. Cook in the oven for around 5 minutes.
  6. Meanwhile, mix the rocket with the olive oil, salt and pepper.
  7. Serve the cooked “tartine” topped with red onion slices, the prepared rocket and a little balsamic glaze.

Recipe Notes

You can top the “tartine” with red onion sliced before cooking it. It is delicious as well. You can as well add Bayonne ham/Prosciutto before cooking it to transform it into a more nutritious meal

Other “tartine” topping combinations that work really well:

  • Fig (dry or fresh)/ red onion/ goat cheese/ rocket
  • Roasted pumpkin/ feta/ rocket/ cashew nuts
  • Cherry tomatoes/ mozzarella/ basil/ Bayonne ham or Prosciutto…
