Back to school, the weather is changing. You want warm comforting yet healthy food for your little ones. You as well need to have a couple of recipes up your sleeve for when your little ones are ill, need healthy food to recover, but will turn their nose to most of the food you will offer them. This is then the perfect recipe, as I said the ultimate baby/toddler comfort food in our household: carrot coconut purée.
My children love this purée so much that they would lick their plate (if I would allow them :-))) to finish it off. We had it again last week as a side as part of our family dinner served with meatballs in a light creamy sauce and it was a hit for toddlers and adults alike.
Sometimes the easiest recipes are the best and it is just about finding that winning combination of flavours. This recipe is a perfect illustration of it. This smooth carrot coconut purée will charm you by its delicate nutty sweetness with hint of woodiness. However don’t expect it to be a complicated recipe as the only preparation time you will need will be to peel your carrots!

Ingredients
- 1 kg carrots
- 100 ml coconut milk
Instructions

Clean, peel and chop the carrots.

Boil or steam the carrots for 15 to 20 minutes until very tender. Drain well.

Place the carrots in a blender, add the coconut milk and puree until very smooth.

Oh this does sound rather lovely, even for grown ups! I make a carrot/swede mash I serve with roast chicken dinners I might have to replace with this. Thank you for sharing with Extra Veg!

That looks like a beautiful baby meal. I loved weaning my girls and this is something I would definately have given them. They’re tweens now but I can see them still chomping this down in a soupy version with some crusty bread
